Ingredients

  • 200 g Cibo di Italia pasta (penne or fettuccine)
  • 1 cup mushrooms (button or cremini), sliced
  • 1 tbsp olive oil or vegan butter
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup American Harvest Coconut Cream
  • ½ tsp black pepper
  • ½ tsp dried oregano or Italian seasoning
  • Salt to taste
  • ¼ cup pasta cooking water (as needed)
  • Fresh parsley or basil for garnish

Method

  1. Cook pasta according to package instructions. Reserve ¼ cup pasta water and drain.
  2. Heat oil in a pan over medium heat. Sauté onions until soft.
  3. Add garlic and mushrooms. Cook until mushrooms release moisture and turn golden.
  4. Pour in American Harvest Coconut Cream, season with salt, pepper, and oregano.
  5. Simmer for 3–4 minutes until slightly thickened.
  6. Add cooked pasta and a splash of pasta water if needed. Toss well.
  7. Garnish with fresh herbs and serve hot.
