Ingredients
- 200 g Cibo di Italia pasta (penne or fettuccine)
- 1 cup mushrooms (button or cremini), sliced
- 1 tbsp olive oil or vegan butter
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup American Harvest Coconut Cream
- ½ tsp black pepper
- ½ tsp dried oregano or Italian seasoning
- Salt to taste
- ¼ cup pasta cooking water (as needed)
- Fresh parsley or basil for garnish
Method
- Cook pasta according to package instructions. Reserve ¼ cup pasta water and drain.
- Heat oil in a pan over medium heat. Sauté onions until soft.
- Add garlic and mushrooms. Cook until mushrooms release moisture and turn golden.
- Pour in American Harvest Coconut Cream, season with salt, pepper, and oregano.
- Simmer for 3–4 minutes until slightly thickened.
- Add cooked pasta and a splash of pasta water if needed. Toss well.
- Garnish with fresh herbs and serve hot.
