Gluten-Free Pasta in Spicy Tomato Sauce

Ingredients

  • 200g Cibo Di Italia Gluten-Free Pasta (Penne or similar)
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup tomato purée or crushed tomatoes
  • 1 tsp red chili flakes (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp dried oregano or mixed Italian herbs
  • Salt to taste
  • Fresh basil leaves (optional)
  • Grated parmesan or plant-based alternative (optional)

Method

  1. Cook the Pasta
    Bring a large pot of salted water to a boil.
    Cook the Cibo Di Italia gluten-free pasta according to package instructions until al dente.
    Drain and set aside.
  2. Prepare the Sauce
    Heat olive oil in a pan over medium heat.
    Add chopped onions and sauté until soft and translucent.
    Add garlic and sauté for 30 seconds until fragrant.
  3. Build the Flavor
    Add tomato purée, chili flakes, black pepper, herbs, and salt.
    Simmer on low heat for 8–10 minutes until the sauce thickens and flavors develop.
  4. Combine
    Add the cooked pasta to the sauce and toss gently to coat evenly.
    Cook for another 2–3 minutes so the pasta absorbs the sauce.
  5. Serve
    Garnish with fresh basil and grated cheese if desired.
    Serve hot with a side salad or garlic bread.
