Ingredients
- 1 cup American Harvest White Quinoa
- 1 cup cherry tomatoes, halved
- ½ cup cucumber, diced
- ½ cup bell peppers, diced
- 2 tbsp American Harvest flax seeds
- 1 tbsp olive oil
- 1 tsp honey
- Salt & pepper to taste
- Fresh parsley or coriander for garnish
Method
- Rinse quinoa and cook in 2 cups water for 12–15 min until fluffy. Cool slightly.
- In a large bowl, combine quinoa, vegetables, and flax seeds.
- Whisk olive oil, honey, salt, and pepper to make a dressing.
- Toss salad with dressing and garnish with parsley or coriander. Serve chilled.
