Ingredients

  • 1 cup American Harvest White Quinoa
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ½ cup bell peppers, diced
  • 2 tbsp American Harvest flax seeds
  • 1 tbsp olive oil
  • 1 tsp honey
  • Salt & pepper to taste
  • Fresh parsley or coriander for garnish

Method

  1. Rinse quinoa and cook in 2 cups water for 12–15 min until fluffy. Cool slightly.
  2. In a large bowl, combine quinoa, vegetables, and flax seeds.
  3. Whisk olive oil, honey, salt, and pepper to make a dressing.
  4. Toss salad with dressing and garnish with parsley or coriander. Serve chilled.
